Born and raised in Puebla, Mexico, Chef Hugo Xochimitl developed a deep love for cooking at an early age, learning traditional Mexican recipes alongside his mother, Irma. Now 34 years old, Chef Xochimitl has spent the past 14 years honing his culinary skills in the United States, after arriving at the age of 20.
His culinary journey began at the beloved Fascino, where he spent three years under the mentorship of Chef Ryan DePersio. From there, Hugo worked for various Mexican chefs throughout New Jersey, eager to learn other regional dishes outside of Puebla.His dedication and passion for cooking helped him rise through the ranks. He then worked for two years alongside Chef Urias Castelan, further refining his skills in authentic Mexican cuisine.
For the past year, Chef Hugo has been an integral part of the team at Gioia Mia, working under Executive Chef Logan Ramirez. Here, he has continued to perfect his craftsmanship, and was given the opportunity to become the head chef of LuLu’s Truck.
Now, Chef Xochimitl is excited to bring his expertise and heritage to LuLu’s Truck, where he looks forward to creating a variety of tacos, amongst other traditional Mexican street fare, and sharing the rich culinary traditions of his homeland with patrons. His passion for Mexican cuisine and dedication to his craft promise to make every dining experience at LuLu’s Truck truly exceptional.
